What takes this tier off the plate

On a monoamine oxidase inhibitor — OFF THE PLATEAged, cured and fermented food carries TYRAMINE, produced by bacterial decarboxylation of tyrosine. Normally gut and liver MAO-A destroy it. With that enzyme blocked it is absorbed intact and displaces noradrenaline — the hypertensive "cheese reaction".
